Today my daughter and I ventured to target, in the rain, to purchase her first Valentine’s to make and send to friends (procrastination at it’s finest). We typically keep Valentine’s Day pretty simple in our home. I always ask my husband for a box of girl scout cookies (Samoas please!) and a simple card. My husband typically asks for something simlar. Some years we have gone out to dinner or purchased more ellaborate gifts for one another but this year we are keeping it simple.

I have never loved ellaborate plans on Valentine’s Day (probably because my birthday is 2 weeks later). My favorite way to celebrate is at home with my loved ones. I love when my husband makes salmon or steak and I can cook up a side dish and treat to enjoy. It is fun for the two of us to cook and laugh side by side. I  love spending any extra time I can with my husband, and now it is fun to add our daughter to the mix.

This Valentine’s Day I plan on making these delicious mushrooms and green beans. They are so easy and only take about 10 minutes to prepare. They are sauteed in butter, always a good start, and seasoned with just a little salt and pepper.

If you are planning a fun Valentine’s night at home I would highly reccomend these green beans and mushrooms for dinner, with some delicious salmon, and roasted vegetables. The meal will be absolutely wonderful and easy to prepare.

Skillet Mushrooms and Green Beans

Ingredients

  • 2 Tbsp. unsalted butter
  • 1 cup of diced mushrooms
  • 1 cup of fresh green beans (cut into one-inch pieces)
  • ½ tsp salt
  • ¼ tsp pepper

Directions

  • In a large skillet, melt butter on medium heat. Add mushrooms to skillet and cook for 5 minutes stirring occasionally.
  • Once the mushrooms are golden brown in color, add green beans to pan. Season green beans and mushrooms with salt and pepper.
  • Cook for another five minutes stirring occasionally until the beans are tender.

  1. This looks super easy and healthy to make! What a simple yet lovely Valentines DAY dinner idea for a side. Love this! We did a little Valentines shopping today too. Consisted of my daughter getting a toy for the pup and keeping it for herself, lol.

  2. This looks so delicious! It’s one of my favorite flavor combinations. I used to make a mushroom and green bean tart that was to die for.
    We never have super elaborate plans either, because our anniversary is a few days before valentine’s day.
