My family and I are trying to enjoy more healthy recipes and meals in the new year.  One way that we have been eating healthier is by eating more extra lean turkey from Jennie-O.Whether you are trying to fuel your body better to achieve better performance and endurance (like me) or looking to shed some pounds (which is my husband’s goal), these are great!  Simply switching ground beef to ground turkey cuts half the calories from a meal – which really is great!  The southwestern turkey is flavorful, yet light, and paired with fresh avocado, tomato, and crisp lettuce leaves as wrapping, these are really hard to beat for a super-easy-to-make, low-calorie meal!

These southwestern turkey lettuce wraps have quickly become a new family favorite!  Even my meat-loving husband loves these wraps!

To Print

  • 1 tbsp. olive oil
  • 1 small onion (diced)
  • 1 pound of extra lean ground turkey from Jennie-O
  • 1 (4 ounce) can of green chilies
  • 1 can of black beans (drained and rinsed)
  • 1 cup of corn
  • 2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili powder
  • 1 tbsp. lime juice (about one lime)
  • 1 head of romaine lettuce
  • 1 tomato (optional)
  • 1 avocado sliced (optional)

• Heat olive oil in a large skillet. Add diced onion to skillet and saute on medium high heat for 3 minutes. • Add turkey to skillet and brown in pan. • Once the turkey is cooked (no pink) add green chilies, black beans, corn, cumin, smoked paprika, and chili powder. Cook on medium for another 5 minutes. • Add lime juice to pan and cook on low for another 2 minutes. • To serve: rinse romaine lettuce leaves, pat dry with a paper towel, then place the southwestern turkey meat in the center of the leaves.  Add optional toppings such as tomato, avocado or additional lime juice. • Enjoy!  (and hey, if you get a bit carried away eating 1 or 2 or 3 extra, don’t worry because these are low calorie and healthy!)
